Today is National Popcorn Day! Popcorn, of course, needs no introduction, especially in the Americas. You may not know that the corn you eat on a cob, or from a can, is a totally different variety of maize than the corn you heat up with oil into popcorn. The only variety of maize that makes popcorn is Zea mays everta. It has small ears, and the kernels burst open when you expose it to dry heat. Small heads of zea mays everta was first discovered in 1948 by Herbert Dick and Earle Smith in the Bat Cave of west central New Mexico.

PEOPLE HAVE BEEN EATING POPCORN FOR AT LEAST 5,600 YEARS IN THE AMERICAS
These were really small ears of corn, ranging from about 2 inches long to smaller than a penny. The oldest of these ears was about 4,000 years old! They also found some individually popped kernels, which were carbon dated at about 5,600 years old. People have also found evidence of ancient popcorn use in Peru, Mexico, Guatemala and elsewhere in Central and South America. Popcorn is literally one of the oldest and universal snacks we know of in the Americas. Fortunately, it still is today, especially on National Popcorn Day!
