Helpings of Seconds for this Skillet Vegan Lasagna Recipe

LASAGNA RECIPE A MUST TO MAKE FOR ANYONE YOU LOVE

Mushrooms, Spinach and Lasagna, oh my!  But this recipe is a cinch to make and will leave you wanting helpings of seconds.  You need a few items and your skillet and only an hour of your time.  So, let’s get the party started!

THE SKILLET INGREDIENTS

16 oz. whole mile ricotta

1/4 c. chopped fresh basil

then 1 large egg

8 oz. shredded six-cheese Italian blend

then 2 oz. Parmesan (fresh is best)

Kosher salt

Freshly ground black pepper

then 3 tbsp. olive oil

12 oz. assorted mushrooms (Portobello, shiitake, cremini, button)

then 1 medium Sweet onion

1 small red pepper

5 oz. baby spinach or kale or chard

then 2 cloves of garlic

1 can fire-roasted diced tomatoes

12 no-boil lasagna noodles

then and finally 10 oz. refrigerated light Alfredo sauce

DIRECTIONS TOWARDS HELPINGS OF SECONDS!

You’ll need to preheat your oven to 400 degrees F.  Stir the ricotta, basil, egg, cheese blend and parmesan in a bowl.  Then add ½ tsp of salt and pepper.  Mix these lasagna ingredients nicely.  But you’re getting closer to assembling this baby and even closer to eating helpings of seconds! Next, you are going to heat some oil in a big skillet on medium. Then add the mushrooms and sauté until they are brown and just on the edge of crispy, then remove them to a bowl.  Add more oil to your skillet, and add the onion, pepper and sauté until tender.  Then add the spinach and garlic and continue to sauté, stirring the spinach until it wilts (it won’t take long).  Add this onion mixture and the tomatoes to the mushroom bowl and stir all together. End with seasoning with salt and pepper.

ASSEMBLING IS NECESSARY FOR THIS LASAGNA LIKE ALL LASAGNAS

Wipe your skillet and coat it with oil.  Assemble four lasagna noodles on the bottom of the skillet and top with your veggie mixture. Repeat this two more times and layer your lasagna noodles in opposite directions.  Top it all off with your cheese blend and parmesan cheese. Bake your delicious skillet lasagna meal for about thirty minutes or until golden brown.  Be ready:  everyone will want helpings of seconds!  You may want to consider doubling your recipe!
