Being a consumer is sure getting complicated recently, especially when it comes to the simple choices we have to make to even try to eat healthy food. It’s been a couple generations now in America, where consumers are frequently at a loss when it comes to even knowing the ingredients in the foods that they buy. From food dyes, additives, preservatives, insecticides and who knows what else, is the food we buy safe to eat? And now, the very agency tasked with protecting us has been gutted of key staff. And because of those FDA staff firings, there’s a good chance that soon even your simple salad could prove deadly.

Also, it’s not clear if the staff cuts at the FDA, new management there or both are why the agency hasn’t been very good about telling the American public about a number of recent outbreaks of illness from bad food. Well, and there’s the cuts to research and FDA food safety testing programs. That’s right, the FDA is going to be testing less without having any other safeguards. And when it comes to the various leafy greens you like to eat in a salad, that’s now a major concern because it could literally be deadly. So what can we do to not die but still enjoy a salad with dinner?

Well, it will take a little prep time, that’s for sure. Because a single head of E. coli contaminated lettuce can end up in literally dozens of pre-cut or chopped bags in the store. So when it comes to lettuce or any other leafy salad greens, you’re going to want to cut as necessary and wash it thoroughly. Because E. coli can be deadly. In 2018, E. coli in romaine gave 27 people kidney failure, and killed five. Last year in 2024, more E.coli romaine put 36 people in 15 different American states to the hospital. And we’re talking about deadly salad. So don’t buy pre-chopped greens, and really don’t buy pre-shredded greens.
Because if you do, our new understaffed and poor communicator FDA won’t be testing and may not even tell you when E. coli could be in your salad.
