CHOCOLATE CHIP CHICKPEA BLONDIES TAKE 30 MINUTES TOTAL TO MAKE FROM START TO FINISH
So do you like brownies or, better yet, blondies? But do you hate beans? Should you eat more beans? Probably. So why don’t you eat bean brownies/blondies, which actually taste like brownies/blondies but not beans? Try this recipe. It will please your senses and offer good news to your gut. These chocolate chip chickpea blondies are to die for. So they are gluten free, low calorie and actually vegan! And the prep time is only ten minutes and the bake time is twenty more. So all together it’s thirty minutes of your time. Now that is worth the work!
THE INGREDIENTS YOU WILL NEED
So you will need very little!
15 ounce chickpeas rinsed and drained well (super important – otherwise you will have gas)
½ cup peanut butter (you can substitute with other nut butters)
1 tsp of almond extract
then 1/3 cup of maple syrup (the real stuff)
¼ tsp baking soda
½ tsp aluminum free baking powder
then ¼ tsp salt
and ¼ cup of any kind of chocolate chips (dairy free if you want to keep it vegan)

THE INSTRUCTIONS
Preheat your oven at 350 degrees Fahrenheit. Grease an 8×8 baking pan with a vegan butter or coconut oil. Add all the ingredients into a blender or food processor minus the chocolate chips. Blend until smooth and then fold in the chocolate chips into the batter. Pour the mixture into the greased pan and bake at 350 degrees Fahrenheit for about 2o to 25 minutes. Check to see if it is ready until a toothpick can be inserted clean. Make sure to cool your chocolate chip chickpea blondies for about 30 minutes before slicing them, otherwise they may crumble. You can drizzle melted chocolate on the tops if you want them to look fancier. You want to store them in an airtight container and refrigerate these blondies for up to a week, for guaranteed freshness.
