Cauliflower Sloppy Joe Even Truckers Can’t Live Without

CAULIFLOWERS ARE FUN FOR TRUCKERS

When you think of cauliflower, you may think, “bleh”.  The only cauliflower I ate growing up was boiled and buttered and boring.  But cauliflowers don’t have to be boiled, buttered and boring.  They can be so exciting even meat-eating truckers will love it.  And so, will you.  So let’s focus today’s meal on a new way sloppy joe.  Love sloppy joes? SLOPPY JOE A NEW WAY A NEW WAVE

You can serve these babies on anything you want.  But the best way to serve a sloppy joe is with a bun.  So, get some buns too!  If you’re a trucker, you will love this recipe, for a much-needed change, especially on a long haul.

WHAT YOU NEED TO BUY

You will need the following for your sloppy joe – all easily accessible at the grocery store:

1 tablespoon Olive Oil

1 small onion, diced

2 cloves of garlic

1 small red bell pepper, diced

One medium head of cauliflower, cut into florets, large stems removed

1 24-ounce jar of organic strained tomatoes

¼ cup organic tomato paste

2 teaspoons Worcestershire sauce

1-2 teaspoons harissa, sriracha or other hot sauce

1 teaspoon liquid smoke (optional, but makes it better)

One tablespoon wholegrain mustard

1 tablespoon coconut sugar (any sugar really, but this is the best option)

salt and pepper to taste

HOW TO MAKE CAULIFLOWER SLOPPY JOE

Roughly chop up your cauliflower – make them chunky with small bits.  Heat olive oil in a pan. Add onion, pepper and garlic, sautéing for 5 to 8 minutes.  Add the cauliflower, strained tomatoes, tomato paste, Worcestershire sauce, hot sauce, liquid smoke, mustard, sugar, salt and pepper.  Sauté and lower heat.  Leave uncovered and simmer for about forty minutes.  Stir often and add a bit of water if it starts to stick.  Once your sauté is thick and your cauliflower bits are tender, it is ready!  Then put it on a bun and get ready for the ride of your life!  Add some potato chips on the side.  (Best served to truckers who love a sloppy joe!)
